I am pretty sure that caramelized onions on anything would be good, so it didn’t surprise me that I absolutely loved these burgers. And, I’m pretty sure that these burgers would be good without the caramelized onions, but, you really don’t want to leave them out. Together they make a delicious dinner.

I’ve never been one to fry burgers inside [are they called patties then? Or are they still burgers?] because it always seems like too much of a mess with all that grease flying everywhere. My oven looks like an oil slick. My mother-in-law made these for us one evening on vacation, and they were so good that I went home and made them. Turns out it wasn’t really that messy.
Plus, there is something about burgers, inside or out, that spells out s-u-m-m-e-r. They can be served with great toppings, something easy like watermelon and presto! an easy dinner for a hot summer evening.
Chicken Chorizo Burgers with Caramelized Onions
The patties need time in the fridge to chill, so you will have to prepare a bit in advance. But, you could form them earlier in the day and be ahead of the game. I served these burgers with the caramelized onions and avocado. I also melted some fresh mozzarella on top. If you want to spice things up, use a hot sausage. It will give these a nice kick. My burgers took a little longer than 3 minutes to cook per side.

1 pound ground chicken
6 ounces chorizo
2 cloves of garlic, minced or pressed
1/3 cup fresh basil, chopped
1 teaspoon salt
ground pepper to taste
2 tablespoons vegetable oil

Mix ingredients together and shape into patties. Cover and refrigerate 40 minutes. Brush pan with oil and heat over medium  high heat. Add patties to pan and cook until golden brown with crispy edges, about 3 minutes per side.

caramelized onions
1 large yellow onion
1/4 teaspoon salt
ground pepper to taste
1 tablespoon oil
1 tablespoon butter

Cut onion in half and then slice into 1/8 inch half rounds. Heat butter and oil in a large saute pan on medium heat. Add the onions,  salt and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 minutes, until onions are browned and caramelized. Allow onions to cool.
